@joperezr @danegsta This moves us to 11.x sdk. Should we do that?

It feels a bit early in the cycle for us to pin main to the 11.x SDK; seems like something we'd want to do once it reaches the preview/RC stage since that's when most users would seriously start looking at getting ready for 11 if they were going to consider upgrading to it.

Right, but it feels like we should build on the version of the SDK our users are most likely to be using; if we were a runtime or framework component going into the SDK itself it'd make more sense to target latest, but then we'd be maintaining a release/servicing branch for the current public SDK, but we're more akin to a public library built on the SDK at this point. If we target 11 we're effectively dogfooding the SDK, which may be fine, but could also lead to point-in-time stability issues vs. the public SDK.

Fixed the issue by pushing the latest from .NET 10 Eng channel. I also have updated the subscription so we only use 10 channel now for these updates.

The arcade update removed the custom --restoreMaui flag and restore_maui
variable from eng/common/build.sh. This broke the build because
eng/restore-toolset.sh referenced the now-undefined variable, causing an
'unbound variable' error under set -u.

Fix by:
- Using ${restore_maui:-false} in eng/restore-toolset.sh to default
  gracefully when the variable is not set.
- Setting restore_maui directly in eng/build.sh instead of passing
  -restoreMaui to eng/common/build.sh, so the feature no longer depends
  on arcade knowing about it.
